Crispy Brussels Sprouts
These are so exotic! The soy sauce, lime, fish sauce, and sriracha are all Asian, of course, while Brussels sprouts, as the name strongly suggests, are European in origin. It’s sort of East-meets-West.
1 pound (455 g) Brussels sprouts
1/3 cup (75 g) lard or coconut oil
2 tablespoons (28 ml) soy sauce
4 1/2 teaspoons (23 ml) lime juice
1 tablespoon (15 ml) fish sauce
10 drops liquid stevia
2 teaspoons sriracha sauce
1 clove of garlic, crushed
Per serving: 210 calories; 18g fat (71.4% calories from fat); 4g protein; 11g carbohydrate; 4g dietary fiber
Trim the bottoms of the stems and any bruised leaves off of the Brussels sprouts. Run them through the slicing blade of your food processor.
In your big, heavy skillet, melt the lard over medium heat. Saute the Brussels sprouts until they’re brown and getting crispy.
Meanwhile, stir together all of the remaining ingredients.
When the Brussels are browned and crispy, pour in the seasonings and stir them in. Keep cooking until the sauce mostly evaporates and then serve.
